Executive Chef: Hamlet & Ghost


A native of Saratoga Springs, NY, Bryan found his calling to cuisine at an early age. He enrolled in his local votech culinary program at age 16 and embraced his new career with passion. Upon graduation he moved to New York City, and staged at the renowned Bar Boulud. After three years of honing his french technique he moved on to Colonie in Brooklyn to work under Noma alum Brad Mcdonald. Eventually moving up to Chef de Cuisine, he learned all about whole animal butchery, fresh pasta making as well as other old world techniques. Bryans last endeavor in New York was The Musket Room. A one michelin Star restaurant in downtown manhattan. There he worked under Matt Lambert, a native of New Zealand and learned the modern side of cooking. In 2015 Bryan took his new skills and moved back to his hometown to pursue his own career as a chef, heading to somewhat of a family business at Hamlet and Ghost. Using all he learned in New York to write his own menu and use his newly acquired techniques to change the food scene in Saratoga.
